Homemade Cornbread
Good food from the Southwest of America. If you have never had real cornbread smothered with butter and honey, you are about to fall in love. We will put a great homemade chili recipe on tomorrow, so come back for that because chili and cornbread together are heavenly.
Homemade Cornbread
Ingredients
1 cup cornmeal (corn flour)
1 cup all-purpose wheat flour
2 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda
2 cups A-Fil (or buttermilk if you can get it)
2 eggs, beaten
Combine cornmeal, wheat flour, baking powder, and salt; mix well. Dissolve soda in A-Fil. Add A-Fil mixture, and eggs to dry ingredients; stir until moistened.
Pour batter into a greased pan, (about 22 cm square). Bake at 200 C for 20 minutes or until browned. Cut into wedges, and serve hot. Cut a wedge in half and smear on lots of butter and top with honey. Ummmmmm!
